I've told you all how much I hate eating my veggies, right? Well, potatoes have always been the exception to that, and I don't think I need to explain why... Especially in the summer, I start craving steak & potatoes from the grill *all the time*. The good news for you is that my intense cravings are your gain, because these grilled radishes are the star of my grilling-filled Summer dinner lineup!!
Now, you might be a radish lover or a radish hater, but try to put those reservations (if you have them) on hold, do yourself a favor, and TRY this recipe!!! I was skeptical to say the least when I was told that these taste like potatoes & I was pretty shocked how much I loved the result.
The key here is the cooking time. You'll have to gauge it for yourself since all grills are a little different, but don't stop cooking them until they're cooked-potato texture. I PROMISE they get there!
Let me know if you fool any of your friends into thinking they're potatoes -- sneaking people health food and seeing if they notice is one of my favorite Summer BBQ games :)
