You want me to do what with my kale?

If you're like me, it's difficult to get in your full amount of veggies everyday in new and creative ways. I used to shy away from kale because of its bitterness and rough texture... But not anymore!

It sounds insane, but the key to kale is to MASSAGE the leaves. I know. Right? But I promise! Here's a video to show you how it's done:

Apart from feeling a little silly for massaging your salad, this dressing recipe is killer to go along with kale. Lemon/acid in general breaks down the kale, so be sure you let it sit for a while in the fridge before you eat it.

Pair this salad with an Ideal Protein drink for your lunch, or with some chicken for a light but very filling meal.

Be sure to measure out both your kale and your dressing before eating - overeating, even veggies, can knock you off track for the week.

****NOTE: this recipe should also include 3 T of freshly squeezed lemon juice... That would be the lemon part of the lemon poppy seed dressing... Oops! :)
